Job Summary

Responsibilities

• Reports to the Operations Director and oversee the kitchen operations of all units
• Conduct audits, establish targets, key performance indicators, policies and procedures to ensure compliance in all aspects of kitchen operations
• Creation of new menu items during promotions and new units opening
• To manage food cost and labour cost, ensuring that these are aligned with the Company’s targets
• Prepare weekly figures and weekly review sheets
• Ensures induction processes are in place for all new Team Members
• Continually monitors service levels when on site and coaches Team Members to improve speed of Service and uphold quality of the brand
• Monitors sales performance and average spends to improve sales & quality
• Ensures all procedures are in place and adhered to with regards to food safety
• Fully responsible and complies with all statutory requirements
• Manage crisis management process
• Responsible for all maintenance issues in all units
• Understands fully and implements all brand standards
• Reviews the accurate implementation of production planning to drive down waste costs
• Supports the effective implementation of all new promotions, marketing activity and product launches to time and quality standards

Requirements

• Min degree in Culinary or related disciplines
• Minimum 3 years of proven ability in kitchen operations management
• Ability in dividing responsibilities and monitoring progress
• Outstanding communication and leadership skills
• Up-to-date with culinary trends and optimized kitchen processes
• Enjoys leading and working with a diverse team
• Proficient in MS Office
